Look at Her Go Scrapbook Page

It's so crazy to look back on these pictures of the baby at 4 months old because she has changed so much in just three short months!

These were pictures I took of her after she learned how to roll from her back onto her tummy.

I used a few embellishments from my stash, but the main papers are from an American Crafts paper pad that I've had for forever. I'm actually almost done with it!

The sparkly blue title letters are Recollections stickers. I bought two packs awhile ago, not realizing that each pack had two sheets of letters in them! What a bargain! I love my American Crafts Thickers, but sometimes they are just not cost-effective.

I numbered each picture to show her progression from tummy to back. The number stickers are from a letter pack that I bought in the Target $1 spot awhile ago.

5 Best New Non-Food Products at GFAF Expo 2016

The GFAF Expo is all about gluten-free food, but there were a lot of exhibitors there that weren't talking about food, at least not from a manufacturing standpoint. These were exhibitors who were making the lives of those who are gluten-free and those who are looking to lead healthier lives a little easier.

Here are my top 5 best new non-food products from the Secaucus GFAF Expo 2016.

1. The Rachel Way Gluten & Dairy Free Food Pantry
This is a food pantry exclusively for those on gluten-free and dairy-free diets who are already struggling to make ends meet. Purchasing specialty foods is expensive, and this food pantry aims to provide those foods free of charge so that people do not let themselves get sick simply because they cannot afford the foods they need. The Rachel Way Food Pantry started in September 2015 in Pennsylvania with hopes to expand to other communities.

2. Freedible
If you're looking for a community of other eaters like yourself, then check out Freedible. This online community helps connect people with food allergies so that recipes and advice and more can be shared. It's a way for you to discover new foods that you CAN eat!

3. Mello Mae Yoga Mats
When I think of yoga, I don't think of chemicals. I think of things that are natural and good for you. And that's where Mello Mae yoga mats come in. These mats are made from jute, which adds an earth-driven feel to your yoga practice while also giving you better grip, traction, comfort, and support. And for every yoga mat sold, the company makes a $1 donation to a rotating roster of charities.

4. Nima
I first saw the Nima portable gluten food tester at last year's Expo, and it's finally available for pre-sale now to the public. (You can see what the device looks like in the picture below. It's the small thing next to the cute plush character version of the sensor.) This allows you to test liquids and solids when you're dining out to make sure that the gluten-free food you ordered really is gluten-free. A sensor for dairy and a sensor for peanuts are next on the list!

5. Generation GF
There are a lot of support groups for adults with Celiac disease, but what if you're a kid with Celiac disease? Then you can join Generation GF, a program of the Gluten Intolerance Group, that aims to give kids confidence and help them develop into future gluten-free community leaders. There are groups across the nation that provide safe environments where kids can just have fun while also learning how to cope with the needs and challenges they face every day.

Ahoy! Scrapbook Page

For Father's Day this year, I dressed the baby up in one of my husband's old baby outfits.

She didn't like it.

But at least she stopped crying long enough for me to get one decent photo. (I put it on a mug, which I'm sure will be only the first of many Father's Day mugs to come.)

Because this layout used an old photo of my husband wearing the outfit as a baby, I liked the vintage look of the patterned paper and larger matching film reel. (I've had those in my stash for a LONG time just waiting and waiting to be used.)

The green letter stickers are American Crafts Thickers.

9 Best New Products at the Secaucus GFAF Expo 2016

This year's GFAF Expo in Secaucus, NJ, sponsored by Glutino, Enjoy Life Foods, and Udi's, was really great! If you weren't there, you missed out on a lot of great new gluten-free and allergen-friendly companies! It was nice to see some of my favorite brands at the Expo, but it was also really neat to discover all-new brands! And that's just what this Expo is about! So without further ado, here are the nine new products that I thought were the best from the 2016 Secaucus GFAF Expo.

1. Gluten-Free Brazilian Cheese Buns
I don't know if you've ever had Brazilian Cheese Buns, but they are AMAZING. I have a recipe for these that I made occasionally, but it's so much easier if they're basically already made for you! Enter the big trend from this year's Expo: Gluten-Free Brazilian Cheese Buns. (I actually think Brazilian Cheese Buns are naturally gluten-free. Correct me if I'm wrong...)

We've got Brazi Bites, who you might have seen on Shark Tank, and its cheese buns come in four flavors. I got to sample the cheddar and parmesan (YES!) and garlic asiago. These were so good!

Then there were the cheese buns from Forno de Minas. Also very good and ready to go for you with little effort on your part.

But if you want more of a "I made these" feel, then there is the cheese bun mix from Chebe. This comes as a box mix that you whip up yourself. Still easier than buying a bunch of random gluten-free flours that you'll never use again unless you plan on making Brazilian Cheese Buns from scratch every night for two months.

2. True Made Foods
I tasted this ketchup and immediately said, "This is the best ketchup I've ever tasted." But True Made Foods doesn't just make ketchup. It has BBQ Sauce and Veracha Hot Sauce. These sauces are all about using fresh vegetables and less sugar.

3. Dedicated Table
You've probably heard of food-delivery services such as Blue Apron or Hello Kitchen, right? They deliver fresh ingredients right to your doorstep, and then you prepare the delicious meal. Well, those places don't often offer gluten-free menus. So that's the void that Dedicated Table hopes to fill. If the idea of a food-delivery service appeals to you but you need gluten-free options, then you might want to check this out. There's a two-person plan and a family plan.

4. Sweet Megan's Cookie Dough
Cookie dough that is safe to eat right out of the jar. I don't even think I need to say anymore. But I will. Sure, you can use Sweet Megan's Cookie Dough to bake actual cookies. There are three varieties: Chocolate Chip Cookie Dough, Sugar Cookie Dough, and Brownie Dough. But because there is no egg in any of this dough, it's all safe to eat raw!

5. RP's Pasta Gluten-Free Fettucine
Gluten-free pasta sometimes gets a bad rap. So if you're skeptical, look no further than this O Magazine-endorsed gluten-free pasta! That's right. OPRAH. What I like about this pasta is that you can get gluten-free fettucine and linguini, not something that every gluten-free pasta company makes! I even have a hard time finding gluten-free fusilli (possibly my favorite type of pasta - just love the swirliness)! RP's Pasta has it all!

6. 88 Acres Seed Bars
I know what you're thinking. "Seed bars? That sounds gross." No, you guys! Not at all! The gluten-free seed bars from 88 Acres are delicious and would make a great breakfast-on-the-go or mid-morning snack. There are three flavors: apple and ginger, chocolate and sea salt, and triple berry. In quite possibly the only time in my life when I have passed up anything with chocolate and sea salt, I sampled the triple berry bar and it was REALLY good! All flavors are also available as granola.

7. Delights Gluten-Free "Hot Pockets"
So here's another time when you guys are going to think "Gluten-free Hot Pockets? That sounds gross." But again, NO. These stuffed sandwiches from Delights taste really good, plus they are made with no artificial colors, flavors, or preservatives. I don't think that real Hot Pockets can say that.

8. Still Riding Gluten-Free Pizza Crust
We are pretty loyal to one particular brand of pizza crust (that shall be left unnamed), but I think we might have to switch to the gluten-free crust from Still Riding Foods. This baked up so crispy; it didn't get soggy at all underneath the sauce as the other pizza crust brand we buy does. And you can get the crust in two sizes for your own pizza or a pizza to share with your family.

9. Mikaela's Biscotti Cookies
I love biscotti, but sometimes it can be a little hard on the teeth when you bite into it. But what if the crunch you love were in a cookie? It is with biscotti cookies from Mikaela's Simply Divine. Available in Luscious Lemon, Chocolate Chip, and Chocolate Mint (the two chocolate ones are my faves), these cookies are lighter than traditional biscotti and gluten-free, of course! The perfect accompaniment to a nice cup of tea.

Mini Me Scrapbook Page

Let's finish up the week with another scrapbook layout! (My GFAF Expo recap will go up next week! It's been really hard whittling down my list of all the best new gluten-free finds from the Secaucus Expo!)

Here's a layout that shows me as a baby and my baby! All of the products on this one came from my stash. There's random Snugglebug, Echo Park, Scenic Route, and Basic Grey on this one.

The journaling reads: From the day Daphne was born, everyone said she looked like me. And it couldn't be more obvious in this photo that Mom and Dad took of Daphne, staged to look like one of me when I was around her age.

In the hospital, the nurses always had to scan my hospital bracelet to make sure it matched up with the baby's whenever they were returning the baby to my hospital room. And one time, the nurse said, "I have to scan your bracelet. Even though I know this baby's yours. She looks just like you." Ha ha. Well, "ha ha" was what I said on the outside. But on the inside I was thinking, "LEAVE ME ALONE. GET OUT OF MY ROOM AND LET ME SLEEP. WHY DID YOU BRING BACK THE BABY?????"

It's very tiring being in the hospital after having a baby. Especially when you have a migraine... but I digress.

Uncle and Aunt Scrapbook Page

Here's a layout of my brother-in-law and sister-in-law holding the baby WAY back when she was just 3 months old. (Seems so long ago.)

This page came together in such a fated way. I found this patterned paper in my stash and said, "Well, I'll use it for a picture of the baby and her uncles." So then I had these pictures and I had some letter stickers in my stash that fit with the color scheme of the patterned paper so that I could spell out "aunt" because my sister-in-law was in the pictures, too. And then I had the chevron patterned paper sitting out on my desk, and it seemed to fit. Same with the heart patterned paper underneath the bottom picture. I grabbed the yellow cardstock from my paper stash, and then I found the dark green cardstock in a recently discovered 8.5 x 11 paper pad, and wouldn't you know it? The dark green fit with the color scheme of the "uncle" paper! The "adorable" tag and the flower were in my random embellishments bag, along with the journaling tag.

The journaling reads: "There's no turning back now." That's what I said to an expecting Pat and Meg after Daphne cried while they held her. Daphne forgot that she had met Aunt Meg and Uncle Pat before - and that was probably because she slept through that visit.

Stroll Scrapbook Page

I got a few more scrapbook pages done for the baby's album the other night. No close-up detail photos to go with them. I took pictures of each finished layout about as quickly as I scrapped them!

This one is of my mom, me, and the baby on a walk in our neighborhood back at the beginning of the summer. (Yes, it was summer. Yes, we were wearing sweatshirts. It was actually cold that day!)

This layout used up the last of my Basic Grey Offbeat collection. I have some paper scraps and embellishment stickers left over to make one or two cards, though, so I'll probably do that at some point. I need to get my card stash back up to snuff!

The sticker letters are old American Crafts Thickers, and the circle journaling spot was just something random I had in my stash.

Cool Minds - Book Review

Whether it's this election season, the upcoming holidays (67 days until Christmas???), or a big presentation at work or test at school, there are a lot of things that can throw our minds into turmoil, making it hard to focus and hard to feel confident in our abilities. But that's where the new book Cool Minds: 11 Easy Ways to Relive Stress, Boost Self-Confidence, and Improve Concentration in School, Sports, and Life comes into play.

Written by David Keefe, this book is actually targeted to young adults, but I think it's a great beginner guide to meditation for just about anyone!

Back when I was still practicing yoga (I need it back in my life!), meditation was a big part of the practice. I wasn't always good at silencing my mind, but even just attempting to meditate seemed to bring huge benefits. And that's why it's called a practice - because you have to practice at it!

This little book (perfect for throwing in a purse, backpack, or gym bag) gives you some background at how meditation can help you, and then offers some techniques that you can use as you begin your meditation practice. Are you looking to relax? Do you need help focusing or getting a confidence boost before a performance? How about changing a negative attitude? All of these things and more can be achieved through the practice of meditation.

I really liked this book and hope to put into practice some of these meditation techniques into my daily life. I have to say it again, this book is labeled as being "young adult", but I think it's a great book for people of any age who want to learn how to meditate.

Nesting Scrapbook Page

It's hard to believe that there was a time when the nursery was unoccupied. Now there's a little human playing and sleeping in there! But last December, the baby was still cooking and we spent my birthday setting up some of the nursery furniture.

This uses Crate Paper patterned paper, Martha Stewart letter stickers (on clearance at Michael's), and Recollections embellishments (also on clearance at Michael's).

I actually saw the letter stickers and the Recollections embellishments and realized that they would be great additions to this Crate Paper paper pad that was in my stash!

And then I already had some baby stickers from a long time ago doing a baby shower page for a friend, so I was able to add some of those to this two-pager, too.

And yes, of course there are pandas! I didn't use black and white paper or anything with pandas on this layout, though I did think about it. I just decided to let the pandas in the pictures take care of that!

One of the reasons those pinwheel embellishments were on clearance was because the buttons in the center had fallen off. But that's nothing that small glue dots couldn't fix!

And while I was scrapbooking about setting up the nursery, the little baby was taking a nap in her crib. There were so many things I had to do during her naptime, but I decided to scrapbook instead.

Lazy Crafternoon - Book Review

Fall is here and pretty soon it's going to be too cold to do anything outside. So how about getting crafty inside?

The new book Lazy Crafternoon is a craft-it-yourself guide geared toward teens, allowing them to get their DIY on and host a crafting party with friends. Written by designer Stella Fields, this book guides aspiring crafters through simple steps to create more than 50 make-and-share projects that can be completed in one afternoon or less.

The crafts are divided into five categories: accessories, school supplies, decorate, celebrate, and food. Some of the projects are as simple as decorating a phone case with washi tape and decoupaging sunglasses, while others will take a little more time, such as decorating a tablet cover.

Most of the crafts require pretty simple and easy-to-find supplies. You'll just want to make sure you go out and buy the supplies beforehand, unless your craft bin is pretty well-stocked. For some of the crafts, a sewing machine will be required.

I like that this book contains a variety of projects for kids to make. I really want to make Rainbow Fruit in Glitter Cups and the Sun Tea Jars. I think those would be fun for a brunch party and/or to give as take-home party favors.

While this is geared toward kids and beginner crafters, the projects could be customized for more advanced crafters. It would also be a fun way for parents and kids to craft (and play) together!

Butternut Squash and Italian Sausage

The other week I saw that cut-up butternut squash was on sale AND Premio Italian Sausage was on sale. So I thought, "Huh, I think I recently saw a recipe using both ingredients." And lo and behold, Everyday with Rachael Ray came through with this recipe for Sausage and Butternut Squash Skillet Supper.

This was a perfect fall meal. The butternut squash was soft and sweet, and it paired really well with the sweet and spicy sausage. I was a little nervous about making it because as soon as my husband pulled the tub of squash out of the grocery bag he said, "Ew squash." And then he quickly said, "It's just because the name 'squash' sounds gross."


But I think he liked it.

The Girl On the Train - Book Club

Yes, I finally read The Girl on the Train! With the movie coming out, my book club decided it would be the perfect time to not only read the book but also go see the movie as part of our October book club meeting.

If you don't know, here's a brief synopsis:

Rachel is a drunk divorcee who rides a train into London every day and looks out at the people living in the houses along the commute. Particularly the people who live in two houses: her ex-husband and his new wife and baby, and a married couple whom Rachel calls Jess and Jason. Their real names are Megan and Scott. When Megan goes missing, Rachel thinks she's seen something that could help the cops crack the case. But Rachel's memory comes into question, and soon Rachel doesn't know if she really knows anything about anything.

What did I think of the book? I feel like if I hadn't seen the movie trailers before reading the book, I might have been more surprised by the book. There were parts of the movie trailer that made me question one of the characters, and so when I was reading about this character in the book, I just knew that this character had something to do with it.

Still, even guessing what I was guessing, there was still enough mystery and suspense for me. It was the sort of book that I just couldn't put down. I kept turning the page because I wanted to find out what was going to happen next. You're in the thick of the story, and you know who the bad person is, and you're yelling in your head at the protagonist like "What are you doing? Why are you going there? Why don't you just do this? ARGHHH!!! Where is this going? What is going to happen next? How are you going to get out of this one?"

Don't you just love books that keep you on the edge of your seat like that?

What did my book club think of the book? Out of the three other people who attended the book club, only two finished the book. But it was agreed that we liked the book. I was hoping that maybe someone had read the book right when it came out to see what they thought of it without having the suggestions of the movie trailer, but nobody had.

What did my book club think of the movie? Despite the poor reviews for the movie, all four of us thought it was a good movie. Some of us weren't wild about the location change (London to New York) and some of us (me) were bothered by the bad dye job or bad wig that the actress playing Anna wore. (Not sure which it was, but it just didn't look natural.) We also thought that the characters of Megan and Tom were not as fully developed as they were in the book, but we realized that there was a lot of content that needed to be condensed in just under two hours. We think a lot of people are trying to compare this to Gone Girl but that's not really a fair comparison. It's not supposed to be like Gone Girl. It's just a good mystery thriller that, if you haven't read the book already, will keep you guessing. Be warned, there's a scene near the end that is kind of gruesome, so if you don't like blood, you might want to wait and rent this one so you can fast-forward.

4 Things to Do With a Pumpkin This Fall

1. Participate in the Teal Pumpkin Project
Just last week I wrote about the Teal Pumpkin Project, and I can't stress enough how important this project is for kids with food allergies. All you have to do is purchase non-food treats instead of candy, which can contain unlisted allergens, and then place a teal pumpkin outside of your door or post Teal Pumpkin Project signage on your door to let trick-or-treaters know that your house offers safe, non-food treats.

2. Get Carving Inspiration 
If you just don't know what to carve in your pumpkin, let the intricately carved and designed pumpkins at events like Hudson Valley's Great Jack-O-Lantern Blaze or RISE of the Jack O'Lanterns inspire you. I've done the Blaze two years in a row. You can read about my first experience at the Blaze here. It really is magical! This year we're doing the RISE, an indoor version that has several locations across the country. Maybe there's one near you!

3. Make Pumpkin Bars
One of my favorite fall things is making pumpkin bars and then eating them while watching Beetlejuice. If you missed it yesterday, here's the link to the recipe for Pumpkin Bars!

4. Chuck a Pumpkin
I wrote about the Last Fling Pumpkin Sling back in 2013, and you can read that post here. This is a very cool event where groups, including students, create catapults to launch pumpkins. Then, they compete to see who can launch the farthest pumpkin! This event used to take place in New Jersey, and then it moved to Pennsylvania. I'm not sure yet where the event will be this year, but if you're not in either of those states, Google "punkin chunkin'" and see what comes up around you! Or just watch that one episode of Modern Family where Cam tells his punkin chunkin' story.

Pumpkin Bars

How have I not posted about this before? Making Pumpkin Bars is an October tradition for me. I make them every year. Usually they are not gluten-free because my husband refuses to eat pumpkin-flavored anything because he is strange. So I just make these for myself (and my co-workers).

I hope the baby likes pumpkin because one day I will make them for her so we can enjoy them together.

This recipe came from my mom. I have no idea where she got the recipe.

4 eggs
1 15-ounce can of pumpkin
1 cup oil
2 cups sugar
2 cups flour
1/2 tsp. ginger
1/2 tsp. nutmeg
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. cloves

1. Preheat oven to 350 degrees.
2. Blend eggs, pumpkin, oil, and sugar.
3. Add dry ingredients and blend until well mixed.
4. Pour into a greased jelly roll pan.
5. Bake 25-30 minutes.
6. When cool, ice with frosting (see directions for that below).

Frosting Ingredients:
2 tbsp. butter
3 ounces cream cheese
1 3/4 cup powdered sugar
2 tsp. vanilla

1. Cream together all ingredients.
2. When the pumpkin bars have cooled, spread the frosting on top.

These are soft and sweet and if you love pumpkin, then you will love these! So what are you waiting for? Make these now! Happy fall, y'all!

Me Too - Book Review

Does it ever feel like nobody else understands what you're going through? Well, you might feel that way, but there is someone who always understands. And that someone is God.

That's the premise behind preacher Jon Weece's new book Me Too: Experience the God Who Understands. No matter what struggles are going on in your life, you don't have to grin and bear it. You just have to turn to God and allow Him to do what He does.

The book is divided into three parts: What Jesus Did, What Jesus is Doing, and What Jesus Will Do. And even with multiple chapters in each part that break it down further, you'd think this book would be very organized to the point where it all makes sense. And I don't know, but I just didn't feel that way when reading it. I actually didn't like it through most of the first part because I just couldn't get into it. The author's writing style didn't do it for me. He tries to bring in humorous anecdotes from his life, but most of the time, it wasn't clear to me what point he was trying to make, and he jumped from story to story so often that I had trouble following his train of thought.

I liked the point of the book: that even as Christians we experience pain and suffering, but we shouldn't hide that pain and suffering from each other. We should realize that we've all been in the same boat and that this shared experience should prompt us to take care of one another, listen to one another, etc. (I even think there is a Bible verse about this. Something along the lines of "you went through it so that you could help someone else go through it. I don't have my Bible verses memorized.) But the author's writing style was a real turn-off for me, and so I wasn't able to fully embrace the book as much as I had hoped to.

There were two lines from the book that stood out to me. This one seemed especially poignant for this election season: "We should never judge an entire group of people based on the actions of a few people in that group." (p. 80)

And then here is one of my favorites about the topic of abortion, which could also be poignant for this election season:
We don't bomb clinics. We don't kill doctors. We don't condemn scared women. Instead, we do what God did for us. We adopt children into our families... 
On behalf of the next sixty million babies who don't have a voice, let's throw lavish baby showers for unwed moms. Let's pick them up and sit with them at their medical appointments. Let's volunteer to rock their babies in the middle of the night. Let's financially support the work of our local crisis pregnancy centers. Let's do whatever we can do to be considerate of all life - the life of the baby and the life of the mom, so that the life of the church has a future. [emphasis mine]
So I guess there was some good take-away from this book, after all!

Gluten-Free Baked Penne Alfredo

Last week I was looking for some easy things to make for dinner that didn't require a lot of ingredients and that used up stuff we already had in the pantry or fridge. I found just what I wanted with this Gluten-Free Baked Penne Alfredo. It was inspired by Gimme Some Oven's Chicken Alfredo Baked Ziti.

It's basically just gluten-free penne pasta (which we already had), jarred alfredo sauce, bacon (which we already had), peas, and shredded mozzarella cheese. The alfredo sauce didn't cost that much, the peas were 99 cents, and the store-brand shredded cheese is always really cheap.

The original recipe calls for making your own alfredo sauce. Uh, no thanks. I do have a really good alfredo sauce recipe from chef Rocco DiSpirito, but it's so much easier to just use a sauce that comes pre-made.

12-ounce box of gluten-free penne pasta
2 cups shredded mozzarella cheese
1 cup of frozen peas
8 strips of bacon, cooked and crumbled
jar of alfredo sauce (whatever the standard size is)
cooking spray

1. Preheat the oven to 375 degrees.
2. In a medium pot, boil the pasta according to the package directions. During the last two minutes of cook time, stir in the frozen peas.
3. When the pasta and peas are done cooking, drain them and then return them to the pot.
4. Stir in the alfredo sauce and the crumbled bacon.
5. Spray a 9x13 baking dish with cooking spray, and then spread half of the pasta into the dish.
6. Sprinkle one cup of the shredded cheese on top.
7. Pour the rest of the pasta on top of the shredded cheese layer, and then top THAT with the remaining shredded cheese.
8. Bake uncovered for 20 minutes.

1. Once plated, we sprinkled grated parmesan on top of ours because we just really like cheese.

2. You can also add chicken if you want, but we didn't have enough leftover rotisserie chicken meat from another meal, so I just left out chicken.

3. If you want yours to be extra saucy, use two jars of alfredo sauce. I think ours could have benefited from just a little more sauce, but it really was fine with just the one jar.

Meal Plan Monday - October 3

We're really trying to keep our weekly grocery bill under $100, and so far last week and this week have been successes! (Although, I only bought my husband four yogurts last week, and I didn't buy another bag of chips, so making lunch was a bit rough, but ...)

Here's what we're eating this week on $89:

Sunday: Pork, Bok Choy, and Millet Hot Pot

Monday: Italian Chicken Burgers

Tuesday: leftovers

Wednesday: on our own

Thursday: leftovers

Friday: turkey burgers

Saturday: Lime, Coconut, and Millet Chicken Soup
