The other week I saw that cut-up butternut squash was on sale AND Premio Italian Sausage was on sale. So I thought, "Huh, I think I recently saw a recipe using both ingredients." And lo and behold, Everyday with Rachael Ray came through with this recipe for Sausage and Butternut Squash Skillet Supper.
This was a perfect fall meal. The butternut squash was soft and sweet, and it paired really well with the sweet and spicy sausage. I was a little nervous about making it because as soon as my husband pulled the tub of squash out of the grocery bag he said, "Ew squash." And then he quickly said, "It's just because the name 'squash' sounds gross."
Right.
But I think he liked it.
