Can you believe it's already June? On June 26, I will have been 30 years old for exactly six months. People say this all the time, but I just don't know where the time has gone. I'm sort of glad that summer is here, although I am not a huge fan of hot weather. At least I no longer have to worry about frostbite standing outside at the bus stop every morning.
So, here is what we're eating this week. I'm bringing back some old favorites that are easy to prepare.
Sunday: Sausage Alfredo
Monday: gluten-free chicken tenders and fries
Tuesday: Cheesy Baked Meatballs
Wednesday: gluten-free waffles
Thursday: southwestern chicken quesadillas
Friday: on our own
Saturday: mini chicken pot pies (more on this later, I promise!)
