Meal Plan Monday 6/6

Sorry I've been a little MIA on the blog. I've been scrapbooking, but I just haven't had the time to upload photos and blog about it. When it comes to cooking, we haven't been that adventurous lately either. It's hard to be adventurous on weeknights. That said, here is a list of what we're eating this week:

Monday - breakfast wraps (scrambled eggs, diced ham and shredded cheddar cheese in a gluten-free rice tortilla)
Tuesday - leftover gluten-free shepherd's pie with leftover gluten-free garlic cheese biscuits
Wednesday - sausage and rice pasta in red sauce
Thursday - not sure yet, but it's amazing what you can come up with after staring into the fridge for a few minutes. That's how I came up with the breakfast wraps idea. :)

  2. I know that it is MUCH more complicated for you, cooking gluten free, but it is quite simple for me to plan the weekly meals.

    I look through the grocery store sales ads on Sunday - marking down the best deals. I match those to my fave recipes. Sometimes I peruse my new cooking mags and look for new recipes to try. Then I make my shopping list according to my seven meals for the week. (I shop for 5 people, and now that the kids are home for the summer, I have to write down breakfast, lunch and dinner meals...exhausting!)

    I usually leave one day free for leftovers and one day free because we are always going out, doing something or eating out at least one night.

    This week's menu:
    S- turkey burgers
    M - chicken tacos
    T - pork tenderloin, mash potatoes and green beans
    W - going out to ball game
    Th - spaghetti and meatballs or hamburger helper (whichever I feel like)
    F - leftovers
    Sa - going out to dinner
