Happy World Baking Day! If you've got Celiac Disease or a food allergy, you can still bake and eat yummy baked goods thanks to companies such as Pamela's that make easy-to-use and delicious mixes. The folks at Pamela's were kind enough to share three gluten-free recipes with me in honor of World Baking Day. So put on your aprons and chef hats, and let's get baking!
Ultra Rich Chocolate Cake
Ingredients:
- 1 bag of Pamela's Gluten-Free Chocolate Cake Mix (it's non-dairy, too)
- 2 large eggs
- 1 cup sour cream (or Lactaid sour cream if you're lactose-intolerant like me)
- 1/2 cup of oil (I used vegetable oil)
- 1 cup water
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- Mix liquid ingredients well, then add the cake mix and stir to incorporate. DO NOT OVERMIX. Pour batter into a lightly greased baking pan. Bake for 22 to 28 minutes for two eight-inch cake pans, 34 to 40 minutes for a nine-inch square pan, 24 to 30 minutes for a 9x13 pan, and 18 to 22 minutes for cupcakes (will make 14 cupcakes).
- Remove cake when a toothpick comes out almost clean.
- Once cool, frost with your favorite frosting!
Other fun recipes to bake would be Pamela's Seven-Layer Bars made with graham crackers and Pamela's Lemon Cookies made out of coconut flour.
