Gluten-Free Leftover Halloween Candy Recipe

Do you still have a lot of leftover Halloween candy? I didn't buy that much this year, thank goodness, because we only had one trick-or-treater. But yeah. We still have a bowl full of candy.

Luckily, I purchased Enjoy Life chocolate this year, so even though we have lots left over, everyone in my family can eat it!

But if you want a different way to enjoy all that leftover chocolate, check out this recipe that gluten-free brand Simple Mills was kind enough to share.


You will need:

1 box of Simple Mills Chocolate Muffin & Cake Mix (made from almond flour, so it's gluten- and dairy-free)
3 eggs
1/3 cup melted butter, melted vegan butter, or melted coconut oil
1/2 cup coconut sugar (or regular sugar)
1 tbsp vanilla extract
chopped up bits of your leftover Halloween candy

You will do:

1. Preheat the oven to 375 degrees Fahrenheit.
2. Line an 8x8 baking pan with parchment paper. (You might also want to grease down the sides of the pan.)
3. Add the cake mix, eggs, butter, sugar, and vanilla in a bowl. Whisk to combine.
4. Pour the mixture into the prepared pan.
5. Bake for 20 minutes. Remove from the oven and immediately garnish with your chocolates.
6. Let cool completely before cutting into squares.

These were AMAZING. We broke our Enjoy Life chocolate bars into pieces. My daughter also wanted to add M&Ms and raisins to her side. I added some broken pretzel sticks to mine.



Following this recipe made the cake turn out very fudgy and a little thicker, kind of like a brownie. And when you place your chocolates on top right out of the oven, they melt down from the cake's heat, adding yet another layer of gooey-ness in each bite.
