Extra White Gold Gluten-Free Chocolate Cake Mix

When your kid tells you that it's Mr. Incredible's birthday and she needs balloons and a chocolate cake to celebrate, you break out the bag of black balloons that you've been hoarding in your basement and look in your pantry to see what ingredients you have for cake. And in your pantry, you find Extra White Gold Gluten-Free Chocolate Cake mix that you got (for free) at the Nourished Festival.


This was my first time making anything with the White Gold brand of gluten-free mixes, and what I like about it is that it's gluten-free AND dairy-free. Plus, you need less than a handful of extra ingredients to add to the mix. As you can see in the picture above, I used vegetable oil, almond milk, and eggs.


Instead of doing one big cake, I decided to make cupcakes. (My preschooler told me this would be okay, helped place the cupcake liners in the tray, and then proceeded to have a meltdown after the cupcakes baked because "I wanted a cake". *sigh*)

I ended up cooking them for just a little bit longer than the recommended cooking time. I may have overfilled the cups a tad. But once they were done, they were delicious! So moist and chocolatey. And safe for everyone in my family to eat!

Let me go back to the overfilling the cupcake tins. This made 12 cupcakes, but if you only fill the tins about halfway, you'll have enough batter for making some extras. Just a little piece of advice.

Of course, this would make a great cake, and I hope to use these mixes another time for birthday cakes.
