A few weeks ago I decided to try something new so we could use up some chicken breast tenders in the freezer. The recipe for Chipotle Chicken Salad from Parents magazine sounded really good, so that's what I made. I didn't really need to do anything special to make it gluten-free, which was nice. Just make sure that your tortilla chips are gluten-free.
It was a little hard to get the dressing to coat all of the slaw, peppers, and chicken. A bigger bowl will be needed for next time. And without the dressing, the chicken was a little bland. But I liked the crunch from the peppers and the tortilla chips.
We had leftovers, but it didn't hold up very well for a second round. Unless you're a fan of soggy tortilla chips...
