Chicken BBQ-Salsa Tacos


A few weeks ago, I (literally) dusted off the crockpot to make Chicken BBQ-Salsa Tacos. This recipe came from the What to Eat When You're Pregnant cookbook, so I can't share the full recipe with you here. But it was super simple. Chicken breasts. Your favorite salsa. Your favorite BBQ sauce. Cook. Eat.

The chicken also made for really good leftovers. Just make sure you have some sour cream handy for your tacos. I thought they tasted better with sour cream. Cooking these also made our house smell so good and almost fall-like that it put me in the mood to break out my Halloween decorations.

Also, if you're making these gluten-free, be sure to check the ingredients on your salsa and your barbecue sauce. We also used soft corn tortillas warmed in the microwave to make them more pliable.
