Okay, so I know I didn't post a Meal Plan Monday last week. The Fourth of July holiday was a busy week and weekend for us, and we didn't have time to hit the grocery store before the work week started. So we basically ate leftovers and kept things simple, which was great because it meant we didn't have to stand by a hot stove or oven and heat up the already-hot kitchen. (Yes, mom, we turned off the a/c after you guys left.) It also helped that I attended a media event on Wednesday night where I was given free food, and Thursday night was our first middle school book club of the summer and we met at a pizza place.
But now it's onto a new week, and we had plenty of time over the weekend to buy groceries. I tried to keep our grocery bill down this week, so again, we are kind of just focusing on easy weeknight favorites that don't require lots of ingredients or prep/cooking time.
Sunday: eggs, bacon, gluten-free pancakes
Monday: BLT chicken salad
Tuesday: hot dogs and fries
Wednesday: Italian sausage and pasta
Thursday: I really don't know. We'll figure it out.
Friday: eating out
Saturday: eating out
