I've said it once and I'll say it again: My husband is a good sport. I decided to get a little fancy and make chicken tikka masala, something I haven't had in SO LONG. This is a bit spicy, I'm not going to lie, but I figured spice wasn't really something that bothered my husband. He eats peppers and onions and all that good stuff.
Well, I think it might have been a bit TOO spicy. But I can fix that for next time because I really enjoyed it. We had ours served over rice, but you can also eat it with naan bread (not gluten-free) or as a topping on a baked potato. I know from personal experience that it is DELICIOUS on a baked potato, or jacket potato as the English call it. That would make a great lunch, actually. I'll have to remember that for next time and make sure there are leftovers.
I didn't have to do anything to make this gluten-free. I did, however, leave out the jalapeno. I'm not dealing with that. Imagine how much spicier this would have been had I used the jalapeno!!!

This looks really good! We like spicy food over here. Even my kids will eat super hot Cajun jambalaya. I'll have to try it!
