After we ate this Chicken Tortilla Soup, my husband and I both went, "Haven't we had this before?" Yes, I'm pretty sure we've made something similar to this but not this exact recipe. I think the version we made before was cooked in a slow-cooker. This was cooked on the stovetop, and we even baked our own tortilla strips using corn tortillas, oil, ground cumin, salt, and pepper. I found this recipe in the October 2010 (wow, that was a long time ago) issue of Fitness magazine. So this is probably a healthier version of whatever it was we cooked before. It's got a lot of color and fresh veggies, although we left out the jalapeno. This soup was easy to make. I pre-cut the corn tortillas, onion, and green pepper the night before, as well as laid out all the ingredients we would need, except for the stuff that needed to stay in the fridge. So when I got home from work on Friday night, we were pretty much ready to go. We just needed to cook everything! Just how I like it.
My son's doctor told me yesterday that he might be lactose or gluten intolerant. I thought of all of your recipes right away. If she tells me he is for sure, I definitely know where to come. That soup looks yummy!
