Simple and Easy

I love things that are simple and easy, don't you? That's why I'm sharing with you two things I made recently that were so simple and so easy and SO completely satisfying. First up is a layout I did using a sketch made by moi. Sometimes it's nice not to have a page filled to the brim with embellishments and tons of paper. All you need are three strips of the same or coordinating paper, some photos, letter stickers, and a small embellishment and you're good to go. This would be great for using up scraps, too! (And yes that is a "v" in the word "fun." So sue me, okay? I ran out of the letter "u". Just go with it.)

Next I have a delicious and easy dinner meal. These are gluten-free chicken nuggets. All you need are chicken tenders (they cook easier than chicken breasts), tapioca (or potato) flour, gluten-free "bread" crumbs, a little bit of baking powder, and an egg! You roll a chicken piece in the flour and baking powder mixture, douse it in a bowl of the beaten egg, roll it in the "bread" crumbs, then cook it in a frying pan filled with vegetable oil. SO EASY. You can even add different seasonings to the flour if you want to kick it up a notch. I went with just plain old salt. Exciting.

And of course, a meal is not complete without corn from Trader Joe's and yummy white rice.

You don't even have to make this meal gluten-free! Just use regular flour and regular bread crumbs and you're good to go!

So that's it! Simple, easy, oh yeah, and quick.

Side note: Did anyone else watch last week's Ugly Betty? Did anyone else [spoiler alert] cry when Hilda got engaged? I am way too emotionally invested in this show. Also, the song playing over that scene is "I Wished for You" by Jasmine Ash. *love*
