I don't know why I don't use our Crockpot more often on weekends. It would be super convenient to get it all started in the morning, and then go run errands and forget all about it until we're ready to eat. Oh well.
I'm just glad that we do use it at all. Like when I made this Cream Cheese Chicken Chili to celebrate the start of football season.
Well, "celebrate" might not exactly be the right word for it.
I saw this recipe on Pinterest, and it was described as being perfect for football season. Apparently, you can also serve this as a chip dip. I can totally see that!
This was really easy to make gluten-free. It's just chicken, corn, black beans, cream cheese, and some seasoning. I was supposed to use diced tomatoes, but I left those out. I don't like tomato chunks in my chili. OH, and this recipe requires a Hidden Valley Ranch Dressing Mix packet. WHICH IS GLUTEN-FREE!!! It says so right on the package! I was so excited because if I couldn't use that, the whole recipe would have been ruined. So, thank you Hidden Valley Ranch!
You serve this over rice, too. All we had was brown rice, which my husband doesn't usually like, but I think the chili masked the brown rice flavor. He didn't say anything about the taste of the rice! Success!!
